firstly, I would like to reiterate that, this recipe is done by merging 2 recipes and hence may not get 100% of idli or dosa. if you need something authentic and particular you may have to follow the authentic recipe for it. secondly, irrespective of ingredients ratio, the idli and dosa batter have to be properly fermented to get soft and spongy idli or even dosa. if you are living in a cold climate keep the batter in a dry and warm place for proper fermentation. lastly, in addition to idli and dosa, you may also use this to make appam, appe and even vegetable uttapam as an alternative.
INGREDIENTS
▢2 cup idli rice
▢1 cup urad dal
▢1 cup poha (thick)
▢¼ tsp methi
▢water (for soaking and grinding)
▢salt
▢oil (for roasting)
INSTRUCTIONS
firstly, in a large bowl take 2 cup idli rice, 1 cup urad dal, 1 cup poha, thick and ¼ tsp methi.
rinse well using water.
add enough water, and soak it for 4 hours.
drain off the water and transfer to the grinder. you can also grind in mixer grinder.
add water as required and grind for 30 minutes.
grind to really smooth and fluffy batter.
transfer the batter to a large bowl.
cover and allow to ferment the batter for atleast 8 hours.
the batter has rinsed up, indicating the batter is well fermented. mix it gently.
take the required amount of batter into a small bowl. and you can refrigerate the rest of the batter for up to a week.
add salt as required and mix well.
you can prepare a slightly thick dosa.
or prepare super soft idli by steaming the idli for 10 minutes.
finally, idli dosa batter is ready and can be used for up to a week.
